Spanakopita pancakes
Spanakopita (cheese and spinach pie) is a delicious traditional Greek dish. It is stuffed with nutritious Spinach, herbs, and feta/ricotta. Inspired by those flavours I have stuffed the pancake with a very similar delicious filling.

Greek scrambled eggs ‘Strapatsatha’
Start your morning with these healthy, protein-packed ‘Strapatsatha’ Greek scrambled eggs.
Traditionally large tomatoes are used which are grated but cherry tomatoes work just as well, just let them reduce in the pan with a little olive oil and oregano for a 10 minutes before adding the eggs. Top with some feta cheese and you have a super fast, nutritious breakfast or light lunch.

Red cabbage isnt maybe a ingredient you use on a regular basis but I can guarantee you it makes the tastiest soup.
It is also packed full of fibre, is high in Vitamin C, K and A so is a great veggie to get regularly into your diet. Topped with gut loving kefir and 'zhoug', a spicy, green chilli and coriander sauce made with our EVOO for extra plant powered goodness.

Grilled cucumber, butter beans and halloumi salad with a cornichon dressing
Cucumbers are a great veggie to include in your diet especially in the summer. They are 95% water so are great for rehydrating in the hot weather. They are a good source of potassium an electrolyte which is especially important in the heat and also a good dose of vitamins K and C.
