Whipped Feta with Roasted Sumac Strawberries and Cherries on Sourdough
Who doesn’t love Strawberries and cream?
Strawberry’s and cream may take center stage at Wimbledon but have you ever tried roasting strawberries with extra virgin olive oil?
Just like slow roasted tomatoes, roasting strawberries concentrates their natural sugars giving them a deeper, sweeter, jammy strawberry flavour and a wonderful thick syrup.
They make the best topping for greek yoghurt or olive oil ice cream but I’ve used them in this strawberry and cherry, whipped feta recipe which is utterly delicious. The saltiness of the feta with the sweet fruit, a little hint of mint, lemony sumac and the flavours of the Governor EVOO is a amazing combination.
Ingredients
400g Strawberries
20 cherries, pitted and halved
4 slices of sourdough
1 tbsp cherry molasses
2tbsps honey
1 tsp sumac
A squeeze of lemon juice
Few finely chopped Basil, mint leaves
1tsp crushed pink Peppercorns
1 tbsp the Governor EVOO
For the Whipped feta
200g Feta
4 tbsps thick Greek yoghurt
Zest of a Lemon
2tbsp Governor olive oil, more if needed
Method
Preheat the oven to 180c/350f gas mark 4
Place the feta, Greek yoghurt and lemon zest in a small blender; whilst the motor is running, pour in the olive oil through the opening. Blitz until smooth, then chill in the fridge.
Place the strawberries and cherries in a bowl, and then add the honey, cherry molasses, olive oil, sumac, pepper, and herbs. Place in a baking dish and roast for 30 minutes until softened.
Toast the sourdough. Smooth on the whipped feta, top with fruit and juices, more basil, mint and a drizzle of the Governor EVOO.
