Gazpacho: Cool, Crisp, and Mediterranean

When the days are warm and your appetite craves something light yet flavourful, gazpacho is the perfect answer. This classic chilled Spanish soup is a celebration of ripe, sun-kissed vegetables, blended into a smooth, velvety bowl of goodness.

Ingredients

450g large ripe tomatoes
10 cherry tomatoes
1 orange or red pepper deseeded and chopped
6 mini cucumbers, peeled, reseeded and chopped
1/2 red onion cut, chopped
1 clove garlic minced
2 tbsps chopped basil
2 tbsp of sherry vinegar
Salt to taste
2 tbsps water
4 tbsps The Governor Extra virgin olive oi

Method

  1. In a blender or food processor, combine the tomatoes, cucumber, peppers, onion, garlic, vinegar, olive oil, and water. Blend until smooth or if you like a little texture add 1/2 of the ingredients and blitz until smooth then add the rest and give a quick blitz leaving some small chunks.

  2. Season: Add salt and pepper to taste. Adjust vinegar or oil if needed for balance.

  3. Chill: Refrigerate for at least 2 hours

  4. Serve: Stir before serving. Drizzle with olive oil and garnish with finely chopped cucumber, pepper, tomatoes.
