Black Cherry, Beetroot, Lentil and Goats Cheese Salad
I am making the most of the British cherry season with this refreshing, protein and fibre-packed salad. It's a delicious balance of sweet, earthy, and tangy flavours.
Cherries are so good for you! They’re packed with antioxidants, particularly anthocyanins, which give them their dark colour and help reduce inflammation. They also provide vitamin C, potassium, fibre, and may help improve sleep thanks to their natural melatonin content.
Ingredients
400g cooked green or brown lentils
1 large cooked beetroot, finely diced
30 fresh black cherries, pitted and halved
1 small shallot, thinly diced
150g soft goat cheese
A handful of chopped fresh mint and parsley
10 toasted walnuts, roughly chopped
For the dressing:
3 tbsp extra virgin olive oil
1 tbsp cherry molasses
1 tsp red wine vinegar
1 small clove of garlic, minced
Salt & pepper to taste
Method
- Make the dressing by whisking together all the ingredients. Set aside.
- In a large bowl, combine lentils, beetroot, cherries, shallot, and herbs.
- Pour over the dressing, gently toss to combine.
- Serve the salad topped with goat cheese and nuts.
