Mediterranean BBQ Sea Bass

Whole sea bass is stuffed with a fragrant mix of sun-dried tomatoes, olives, garlic, herbs, and lemon, then grilled to perfection over open flames. The result is tender, flaky fish infused with bold Mediterranean flavours and a hint of smokiness from the BBQ.

Served with charred lemon slices and a crisp salad, this dish is perfect for warm evenings, al fresco dining, or when you want to bring a taste of the sea to your grill.


Ingredients:

  • 2 whole sea bass- gutted, heads and tails removed
  • 4 sun-dried tomatoes, finely chopped
  • 6 olives, finely chopped 
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • Pinch salt 
  • Lemon slices
  • 2 tbsps the Governor extra virgin olive oil 


Instructions

  1. Preheat BBQ to medium-high
  2. Mix the chopped olives, sundried tomatoes, garlic, lemon juice, parsley, oregano, salt, and pepper.
  3. Pat fish dry. Stuff the inside with the mixture.
  4. Place fish in a fish basket and cook for 5-7 min per side until opaque and lightly charred.
  5. Serve with grilled lemon slices and a fresh salad.
