Lamb Koftas
Lamb Koftas are a deliciously spiced, flame-grilled favourite that brings the bold flavours of the Middle East straight to your plate. Made with tender minced lamb, fragrant herbs, and a warming blend of spices, these koftas are rich, juicy, and full of character.

Ingredients
- 500g minced lamb
- 1 red onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp cinnamon
- 1tsp dried mint
- 1tsp paprika
- 1 tsp chilli flakes
- 2 tbsp chopped parsley
- 1 tbsp chopped coriander
- 1 tsp all spice berries

2 tbsp governor extra virgin olive oil
Method
- Heat a frying pan to a medium heat, add the EVOO, then add the onion and garlic and sauté for 10 minutes until softened. Leave to cool slightly.
- Place the lamb, herbs and spices, and the cooled onions into a large bowl. Season then mix well, really squeezing the mixture together.
- Divide the mixture into 4 portions and roll each into a sausage-shape. Place in the fridge for at least 2hrs or overnight if possible.
- Preheat the BBQ to a medium heat. Brush the kofta’s with EVOO and cook for about 8 to 10 minutes turning regularly until slightly charred. Serve with pitta, tzatziki and salad.
