Healthy Greek Beans on Toast with slow-roasted tomatoes
These healthy baked beans are made with slow-roasted tomatoes, creamy Greek gigante beans, and extra virgin olive oil for a dish that’s both nourishing and flavorful. Ingredients
280g jar or tin giant Greek gigantes beans or butter beans drained.
300 g cherry tomatoes
4 cloves garlic, sliced finely
1 tsp dried oregano
Sea salt
3-4 tbsp the Governor extra virgin olive oil
3-4 thick slices olive bread
feta
1 tbsp of fresh dill, finely chopped

Preheat your oven to 160 °C. Add the cherry tomatoes and garlic to a roasting dish. Generously drizzle with olive oil, sprinkle over oregano, salt. Toss gently to coat. Cook until rich and jammy, roughly 45 minutes, stirring once halfway. Add the beans and cook for 10- 15 mins.

When the tomatoes and beans are ready, toast the olive bread until crisp. Spoon them over the toast. Crumble over the feta, scatter with fresh dill.
