Baked Feta with Autumn Figs, Pears and Walnuts

These gorgeous pears came straight from my mum’s pear tree, so I wanted to put them to good use! Paired with sweet figs, creamy, salty feta, walnuts, thyme, and a delicious Greek Balsamic, everything bakes together until the fruit is soft and caramelised and the feta is warm and gooey, then finished with a generous drizzle of our high-phenolic EVOO. So easy, delicious and nutritious.

Ingredients

    • 1 block of feta

    • 2 ripe pears, cored and cut into wedges

    • 4 fresh figs, cut open slightly

    • A handful of walnuts, roughly chopped

    • A few sprigs of fresh thyme

    • 2 tbsp The Governor Extra Virgin Olive Oil, plus extra to finish

    • A drizzle of balsamic

    Method

    1. Preheat the oven to 180°C/Gas 4

    2. Place the block of feta in the centre of a baking dish and arrange the pear wedges and halved figs around it.

    3. Drizzle with The Governor EVOO and a little balsamic, scatter over the fresh thyme and season with black pepper.

    4. Bake for around 10-15 minutes, adding the walnuts for the final 6 minutes, until the pears are tender, the figs are beautifully soft and jammy, and the feta is warm and lightly golden.

    5. Remove from the oven and, while everything is still warm, finish with a generous drizzle of The Governor EVOO.

    6. Serve straight from the dish with warm bread or serve with rocket for a delicious salad.
