Our olives come from the indigenous Lianolia variety, grown on centuries-old trees, some dating back more than 500 years. These trees are not irrigated, which encourages deeper rooting and resilience to drought, while protecting precious water resources.

We don't rely on synthetic fertilisers or pesticides. Instead, we follow organic and regenerative practices that:

  • Enrich and protect soil biodiversity.
  • Support pollinators and native herbs
  • Prevent erosion on the rocky Corfiot hillsides
  • Allow the grove to function as a carbon sink, capturing CO₂ from the atmosphere

In fact, research shows that for every litre of our olive oil produced, around 10 kg of CO₂ is removed from the air.

Our award‑winning olive oil offers a robust, grassy, herbaceous profile, with fresh‑cut grass, artichoke, and herbal notes leading to a long, peppery finish, a sign of elevated oleocanthal and oleacein levels.

The olive groves of Corfu, especially where The Governor is produced, grow in rocky, calcareous soils with excellent drainage.

The shallow, stony earth encourages deep root systems, which pull up minerals and enhance aromatic complexity in the oil.

The mineral stress on the trees stimulates the production of defensive compounds, namely polyphenols like oleocanthal and oleacein.

These compounds are what give The Governor its signature peppery bite and strong antioxidant profile.
