On Corfu, great lamb doesn’t start in the oven, it starts in the marinade. And at the heart of it is extra-virgin olive oil: not just a carrier of flavour but an ingredient that actively transforms the meat, resulting in a deeply aromatic, tender, and rich roasted lamb.
Extra virgin olive oil isn’t just fat; it’s packed with polyphenols, natural compounds that

Ingredients
- 80 ml Governor extra virgin olive oil
- Juice of 1 lemon and zest
- 5 garlic cloves, crushed
- 2 tbsp fresh oregano (or 1 tbsp dried)
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp sea salt
- 1 tsp paprika (optional)

Make the Marinade
In a bowl, whisk together Olive oil, Lemon juice, zest, Garlic, Herbs, Salt, pepper, and paprika -
Marinate the Lamb
Score the lamb lightly with a knife. Rub the marinade all over, pushing it into the cuts. Cover and refrigerate at least 4 hours (overnight is best). -
Roast. Preheat oven to 170°C (fan 160°C)
Place lamb in a roasting tray. Add potatoes, onion, and wine/water around it. Cover loosely with foil. Roast 3–4 hours, depending on size. Baste occasionally with pan juices. Remove foil for the last 30–40 minutes, increase heat to 200°C
